Vegan food is intimidating partly because it seems complicated. Especially if you’ve been an omnivore for your entire life. It’s like learning food and how to cook all over again.
I know some vegans will say, “it’s not hard. Just eat an apple.”
And if you’re like me, you’ll laugh and think, “yeah.. that’s not going to work. I need more.”
I’ve said it before and I’ll say it again, I’m an unhealthy vegan. Rarely can I just eat an apple and be good. Rarely can I just have a handful of nuts and seeds and be good. Ya girl needs substance and savoury goodness.
I’m not one of those people that can just eat raw veg or a fruit salad and call it a meal.
Papa chickpea can… I cannot.
With that said, vegan meals don’t need to be difficult or have 85 steps where you need to soak cashews overnight, and harvest wheat from a Norwegian field, and pray to the gods naked under the full moon at 3:43 am.
It just takes some experimentation!
Even that doesn’t need to be difficult.

Papa chickpea came up with this a few days ago and now I’ve stolen it and made it my own.
Enter: Hummus Roll!
It’s damn good, healthy, filling, and SIMPLE.
Here I’ve used roasted red pepper hummus, avocado, and black olives on a potato roll (aka hotdog bun).
It’s also easy as a mom. It’s all contained in the bun so I can use one hand and still have a free hand.
Now, if you wanted you could make the hummus yourself, pray to the gods naked under the moon, and use celery from the farms of Tibetan monks to scoop up your hummus. Make it as difficult or easy as you’d like!
The point is: it doesn’t have to be difficult and can still be good and filling!
